Breakfast for Dinner

Fridays I like to take Aubrey out for dinner even if its just to go get a burger at Texas Burger. If your from the country you know what I am talking about. If your not well im sorry! Just joking. So anyways where was I going with this. So Friday the weather was terrible. It was pouring and the last thing I wanted to do is go out for dinner. So after checking out our pantry I decided to make chocolate chip pancakes. BREAKFAST FOR DINNER, why not?! Plus I had all the ingredients at home. This recipe was super easy and beyond amazing.

"Chocolate Chip Pancakes"

  • INGREDIENTS:
      2 cups all-purpose flour
       1/4 cup sugar
          2 tablespoons baking powder
        1 teaspoon salt
      2 eggs
       1 1/2 cups milk
                1/4 cup vegetable oil
                    1/2 cup miniature chocolate chips
              CINNAMON HONEY SYRUP:
    1 cup honey
                   1/2 cup butter or margarine, cubed
       1 teaspoon ground cinnamon

DIRECTIONS:
1.In a bowl, combine the flour, sugar, baking powder and salt. Combine eggs, milk and oil; add to dry ingredients and mix well. Stir in chocolate chips. Pour the batter by 1/4 cupfuls onto a lightly greased hot griddle. Turn when bubbles form on top; cook until second side is golden brown. Keep warm.
2.Combine the syrup ingredients in a 2-cup microwave-safe bowl. Microwave, uncovered, on high until butter is melted and syrup is hot, stirring occasionally. Serve with pancakes.

Aubrey loved them! She literally inhaled the pancake. By the way our weekend was amazing ill be posting pics soon. We did a lot of pool side which equals amazingness! Happy Monday!

Praying

So it's Saturday night and I am blogging, what?! Aubrey is peacefully sleeping in her room and well I am having a glass of wine after a long eventful day {all good events by the way}.

I just wanted to share a sweet moment that just happened tonight. So at around 7:30ish we start our night routine and its starts with giving Aubrey a bath. After that we read a bed time story while I rock her in her rocking chair. Then we head to the kitchen to get her a sippy cup of warm milk. While her milk is warming up we usually hold hands, bow our heads and pray.
 Well we have been praying every night like this for a few months consistently without missing a night. At first she was confused and would poke me, grab my face and yell "mom!" but as time went by she kinda got the hang of it.
Well tonight was no exception the routine was in action. As we were standing in the middle of the kitchen in front of the microwave she looked at me, grabbed my hand and mumbled something in some kind of baby language. At first I didn't understand what she was doing. My first reaction was to say "Umm what is it Aubrey? I don't understand". Finally I realized she was ready to pray. I cant even tell you how I felt at that very moment! All I could do is bow my head mumble a prayer while thanking God in my head.
This just gos to show how if we are consistent with our actions of faith our children will follow.

As for me and my house, we will serve the Lord

Friday's Letters

Dear Friday, how I love you. You dragged the week along but I am so very thankful that you are here. See Aubrey and I have big plans this weekend. It's a weekend full of events and well I just can't wait. Dear Summer, I am also so very thankful that you are here. I know that I am Mexican and all but my tan was kinda slackin'. Plus I love to wear summer dresses and wedges. I love hanging by the water with a cold one in my hand. Dear sunblock, I can still smell you from this morning when I was rubbing it on Aubrey. See she had splash day today at school and well the last thing I want is for her to get a sunburn. Thank you for protecting her but can you please come off my hands because every time I smell you I wish I was in my 2 piece swim suite by the water. Spank you! Dear coffee, have I told you lately that I love you and how I can't live without you. Its the truth. I gave you up for 40+ days for lent and lets just say I don't think I will be giving up next year. Dear followers, I dont know about you but I am loving this Friday's Letters thing. I think it's going to have to be a must on Fridays. Link up!

{Organization}

So as any mommy knows mornings with kiddos can be NO I should say ARE stressful. Between getting the kids ready, getting yourself ready, making breakfast, letting the dog out, cleaning a little before you leave. I mean I can go on and on. This morning thing can get kinda CRAZY. So I decided to get a little organized.

I found the hooks at the Dollar Store. Yes that is right this project only cost me .99 cents! Aubrey has a walk-in-closet so this is actually in her closet. Pretty neat! I decided to only set outfits out for Monday through Friday. So Sunday night as we are getting ready for the week I set her outfits with the bow and all.  So every day during the week I just walk in her closet get the outfit of the day and BAM she is ready. What a brilliant idea, huh?!

First Communion

So as you know I only have one daughter but in my pictures there is always another little girl which is my little sister Kathy. Kathy is 9 years old and she basically lives with me. I joke with her she should just pack her stuff officially move in and Ill tell dad how much to send me for child support. Well Kathy just did her first communion and asked me to be her Godmother. I feel so honored and still feel like tearing up just thinking about it. Kathy has been such a blessing in my life. I was thinking about it yesterday and it occurred to me that God knew that I was going to be a single mom for a little bit so he grant me a little special helper which is Kathy. Kathy helps me tremendously with Aubrey and they truly are like sisters. They both love each other so much. Kathy inspires me to be a better person. I not only want to be the best big sister for her but the best Godmother as well.
{I love you so much Kathy and I feel so lucky that God gave me you!}

Did you know?

The Cuddle Advantage

"Kissing your baby could actually boost her brain as she grows, a new study in Proceedings of the National Academy of Sciences shows. Researchers observed parents with their kids (ages 3 to 6) then took images of children's brains four years later. The hippocampus of tots with nurturing folks was almost 10 percent larger than that of kids with less nuzzle-y parents. The effect may be especially strong in infancy, when development is at a rapid clip. Another excuse to snuggle!"
American Baby Magazine

With that said GO LOVE ON YOUR BABIES! I bet Aubrey's brain is 20 percent bigger I mean I kiss her like every 2 seconds. I just can't get enough of that little girl! Hope everyone has a super duper cuddly weekend!
