a little STORY with a big GIFT

Sometimes we take the littlest things for granted even something so big as conceiving a baby.
My dearest friend has been trying so hard and for so long to conceive. I have been her ear to talk to, shoulder to lean on and the friend waiting by the restroom door asking "is it positive?!?!".
It was just an ordinary day with Joyce Meyer on TV like always. Me running around like a mad woman trying to get ready for the day and keeping one ear open to what the message was that day. Don't ask what the message was because to tell you the truth I can't even tell you. All I remember is in the mist of the daily routine Joyce said "ASK, BELIEVE & RECEIVE" something inside of me stirred up and it was like I knew that message was for Sarah. So I ran to my phone and text her the message  and to say the least a few weeks later I walked into the office and with a SMILE on her face she said I'M PREGNANT!  All the glory be to God!
Maybe the message gave her hope, maybe it was just what she needed to face another negative sign on the pregnancy stick. I don't know! All I know is when God tells you to do something do it and it's only then that you will experience His GLORY!

Sarah and I at her baby shower.
Just a special touch for baby P's nursery.

HOW TO MAKE IT:

So easy and so special! We love you baby P and I cannot wait to meet you!

Creamy Chicken & Chile Enchiladas Recipe

LOVE LOVE LOVE this recipe. So easy to make! Which I love bc with working and being a mommy I dont have much time to spend slaving over the stove. With this recipe all you do is prepare it, put it in the oven and BAM!!!! you have a DELISH meal. This is one of our favs...Jay LOVES it! Hope you all enjoy!

You will need:
1lb uncooked chicken breast
1pkg (8oz) cream cheese- cut into cubes
1 can (4.5oz) of chopped green chiles
1 pkg of corn tortillas- any works
2 can of green sauce (10oz)- El Paso works great!
3/4 cups of shredded cheddar cheese

1. Cut chicken into cubes. Cook on a non-stick skillet until no longer pink. Feel free to add your favorite seasonings to the chicken while its cooking.

2.When the chicken is nice and cooked add the cream cheese (cut into cubes) and the can of chiles, do not drain chiles...Turn heat to low and let the cream cheese melt and stir occasionally.

3. Preheat oven to 400F. Spray 13x9 pan with cooking spray. Put your pack of tortillas in the microwave and let it heat for about 30-45 seconds. This will prevent the tortillas from braking when you roll them. Scoop some chicken and chile mix on your tortilla, roll it and place it in your baking pan with the seam down.

4. Once all is rolled and nicely placed in the pan...poor green sauce

5.Sprinkle with cheddar cheese

6. Bake for 15- 20 min or until cheese is nice and MELTED!

Hope you all ENJOY! They are truly EASY to make and soooo DELISH!!!!! Serve them with refried bean or rice and a scoop of sour cream on top! Yum Yum!
